
Well I have finally gotten around to posting the second part of my kitchen experiment (
Read Part One). Here is the list of ingredients that I used. The original recipe called for buttermilk, which I left out. We shall see if that was a mistake when I try to make rolls with my newly made yeast.
1cup white cornmeal
1/2 cup flour
1/4 cup water
2 cakes yeast
1 Tbsp. sugar
cornmeal, small amt.

Mix everything together and let it sit until it is bubbly. The recipe says 20 hours, but mine only took a couple. Then add a small amount of cornmeal at a time, until you have a thick mix that you can spread or roll out on a cookie sheet. Cover it with a dishcloth and let dry for about 3 days, or until it is completely dry. As it dries, occasionally crumble it with a fork or your fingers. I started doing this, but forgot after the first day and now I have large chunks. =( Store in a glass container in the freezer. Tomorrow I will make an attempt at bread, or rolls, or something (depends on my mood), so watch for Part Three.
