Zucchini Bread

This is one of my all time favorite bread recipies.  In the fall when I am harvesting zucchini, I grate it and freeze it in 2 cup portions with this recipe in mind.

2 1/2 c. sugar
3 eggs
3 c. flour
3 tsp. vanilla
1 c. oil
2 c. grated zucchini
1 tsp baking soda
 1/4 tsp. salt
1/4 tsp. baking powder
 1 c. nuts (optional)
3 tsp. cinnamon

Preheat oven to 350 degrees.  Combine all ingredients and mix well.  Pour into  two greased loaf pans.  Bake both pans together for 1 hour.

This bread freezes well.  If I have eggs I need to use up, I will make several loaves and stock my freezer for summer, when I don't want my kitchen heated by my oven.
