As promised, here is my new favorite bread recipe. I call this sandwich bread because it slices nice and doesn't cover my counter in crumbs.
Homemade Sandwich Bread
1 (1/4 ounce) package active dry yeast
1/2 cup plus 2 cups warm water or milk
1 tablespoon lard or oil
2 tablespoons sugar
1 tablespoon salt
7 to 8 cups flour
~ Dissolve yeast in the 1/2 cup warm water.
~ In a large mixing bowl, combine lard (or oil), sugar, salt, and remaining 2 cups of water.
~ Add yeast to mixing bowl.
~ Slowly add flour to make a soft, elastic dough that doesn't stick to the sides of the bowl.
~ Cover dough with a towel and let rise till doubled in size.
~ Punch dough down and divide into 2 balls.
~ Form 2 loaves with your hands and put the loaves in greased loaf pans.
~ Cover with a damp cloth and let rise again until double.
~ Bake at 325 degrees for about 45 minutes. The bread will sound hollow when it's done.
When I made this recipe I used water instead of milk, and oil instead of lard. To check to make sure your yeast is still good, you may want to proof it.
