Granola Cereal

In an effort to get one more store-bought item out of our pantry, I tried making granola cereal.  My kids LOVE cereal.  For breakfast we either have oatmeal or cereal. Sadly cereal is just so expensive, and organic cereal is way expensive.

I found several recipes that looked promising, but either called for corn syrup or didn't clump.  I like clusters in my cereal.  I finally just made up my own recipe.



Granola Cereal

1/2 cup water
1 1/2 cup brown sugar packed
8 cups oatmeal
5 tsp. vanilla
1 tsp. salt
4 Tbs. honey
1 cup chopped nuts (pecans or almonds are good)
dried fruit (optional)

1)  Combine water and brown sugar in small sauce pan.  Heat on stove until sugar is dissolved.
2)  To sugar mix, add vanilla and salt.  Mix well.
3)  In a separate bowl, combine oatmeal, nuts, and dried fruit
4)  Add sugar mix to oatmeal and mix well.
5)  Add honey.
6)  Spread on cookie sheets lined with parchment paper.  Spread thickly, this will help it to clump.
7)  Bake for 45 minutes at 275 degrees.
8)  Allow to cool completely before you remove from pan.


This recipe is a good base.  I would like to try almond flavoring instead of vanilla, or add a little cinnamon.  Play around with it until you find something your family loves.

  1. My family loves granola too, but like you, I don't want the garbage in my pantry. So, I just stopped buying cereal with the promise I might actually make something some day. We actually eat eggs about 3-4 times a week, pancakes 1 time, and who knows the other times. I try other things all the time. We do eat oatmeal once a week, but the kids don't seem overly thrilled with it. Homemade granola is just the thing. I'll give this a try.

  2. Here's another recipe to switch things up. I've been making this one for a few months now and I'm STILL not tired of it. It clumps too!

    I'll try yours next go around as it sound good too.

    Granola

    5 cups rolled oats
    1 cup slivered almonds
    1 cup coconut
    1/3 cup brown sugar
    1/3 cup honey
    1/2 cup creamy peanut butter (I use crunchy)
    1 cup dried strawberries (use my dried apples)

    In a large bowl toss the oats, nuts and coconut together. Combine the brown sugar, honey, and peanut butter in a small saucepan over medium heat until creamy {about 2 minutes}. Pour the peanut butter mixture over the oat mixture and stir to combine. Pour the mixture onto a lined cookie sheet {I used a silpat} and bake at 250 degrees for about 60*. Stir every fifteen minutes so the mixture does not burn. Cool to room temperature, add dried fruit and hide the granola goodness in an airtight container.

    *I tend to cook it longer - maybe 30 min. more, to toast the almonds and coconut.
